If there is one aroma that defines summer and warm evenings in the Algarve, it is the fragrant steam released when a Cataplana is opened at your table.
For many of our guests, seeing this clam-shaped copper cookware for the first time sparks great curiosity. But I assure you: after just one bite, you will understand why this is the most iconic dish of our region. Today, I am sharing the history behind this culinary treasure and my top local tips for enjoying an authentic one!
đïž What is a Cataplana and Where Does It Come From?
A cataplana is not just the name of the recipe â it is actually the name of the cookware itself! It consists of two metallic domes (traditionally made of hammered copper) connected by a hinge and side clamps.
Its origin dates back to the Moorish presence in the Algarve (8th to 13th centuries). The Moors adapted the concept of the North African tajine, creating a sealed metal container that allowed food to steam slowly over low heat, locking in all the natural juices, aromas, and nutrients.

The magic of the cataplana lies in the freshness of its ingredients. As everything cooks sealed together, the fish, shellfish, and herbs create an intensely flavorful broth. The most popular options in local taverns are:
- Seafood Cataplana: A rich mix of prawns, clams, mussels, crab, and langoustines.
- Fish & Shellfish Cataplana: Tender fillets of fresh local fish (such as monkfish, sea bass, or grouper) combined with clams and prawns in a base of tomatoes, peppers, garlic, and fresh coriander.
- Surf & Turf Cataplana (Pork with Clams): The ultimate traditional combo featuring tender pork loin cooked together with fresh clams and local chorizo sausage.

- Avoid pre-made cataplanas: An authentic cataplana is cooked fresh to order and takes at least 25 to 40 minutes to prepare. If it arrives in 10 minutes, it was pre-cooked!
- The opening ritual: The dish should always be brought to your table sealed and opened right in front of you. Smelling that first burst of fragrant steam is half the fun!
- Don’t skip the bread: Always order local crusty bread to dip into the rich broth at the bottom â leaving broth behind is almost a crime!
